In the old times, Lasithian diet was largely based on local products. Products such as oil, bread, pulses, potatoes, vegetables and dairy products were produced from crops and flocks of the local families.
For these reasons, the Lasithians generally had little "dependence" on the so-called grocery store, from which they only bought fish, rice, and pasta. The interesting thing about fish was that because they could not be maintained during transport, from the coast to the plateau, they were first fried and then sent to the grocery store.
The Lasithians mainly used olive oil for cooking, and for some time after Christmas, they used pork fat. Because their diet was largely based on plants (they were consuming many wild herbs which existed in great abundance and variety), the Lasithians used olive oil in large quantities to meet their daily calorie needs.
